- 1 oz Marzetti® Champagne Vinaigrette
- 2 oz Spinach leaves
- 1/2 cup Cucumbers, seeded & thinly sliced
- 1/2 cup Roma tomatoes, julienned
- 1/4 cup Red onions, julienned
- 1/4 cup Kalamata olives, pitted
- 1 oz Feta cheese slice
- 1 tsp Olive oil
- 12 Parsley sprigs, stems removed
In a medium bowl, toss parsley and spinach in half of the Marzetti® Champagne Vinaigrette.
Place the greens on a plate.
Using the same bowl as above, toss the cucumbers, tomatoes, red onions and kalamata olives with the remaining Marzetti® Champagne Vinaigrette and place on top of the greens.
Place the slab of feta cheese over the cucumber blend and drizzle with extra virgin olive oil.
Finish with the fresh ground black pepper to taste and serve immediately.
