- 1 1/2 cups Marzetti® Champagne Vinaigrette
- 2 tbsp Olive oil
- 2 lbs Salmon fillets
- 1 lb Mixed greens
- 1 pint Raspberries
In a bowl, mix Marzetti® Champagne Vinaigrette with mangos, lime juice, lime zest pineapple, mint, cucumbers and nuts. Set aside.
In a skillet, cook salmon in olive oil until done. Place salmon on a bed of mixed greens and top with fruit salsa; finish with fresh raspberries.
