INGREDIENTS
- 1 cup Marzetti® Ranch Veggie Dip
- 1 lb Large shrimp, peeled and cleaned
- 1/4 cup Lemon juice
- 1 small Garlic clove, minced
- Chopped parsley (optional)
In a medium mixing bowl, combine shrimp, 1/2 cup Marzetti® Ranch Veggie Dip, lemon juice, and garlic, and toss all together to coat shrimp. Cover with plastic wrap and refrigerate 1 hour. Remove shrimp from marinade; thread shrimp onto metal or bamboo skewers. Prepare a grill to medium-high. Before grilling, oil grates of grill rack. Grill shrimp 5 minutes on each side or until shrimp curl and are cooked thoroughly. Sprinkle with optional parsley. Divide remaining 1/2 cup Marzetti Ranch Veggie Dip into small ramekins and serve with the grilled shrimp.
