INGREDIENTS
- 2 oz Marzetti® Lemon Vinaigrette
- 2 oz Baby arugula
- 2 slices Prosciutto, sliced thin
- 8 Asparagus, steamed
- 7 Orange Segments
- 1 tbsp Pistachios
- Parmesan cheese, shaved
- Ground black pepper
Roll 4 asparagus spears into each prosciutto slice. In a medium bowl, combine arugula, pistachios and orange segments and toss with Marzetti® Lemon Vinaigrette. Place the arugula salad on a plate and top with prosciutto asparagus wraps. Shave fresh parmesan over the salad. Top with fresh ground black pepper and serve immediately.
