Beef is STILL What’s for Dinner

Doing More with Beef for Less.

menu planning_beefThe U.S. Department of Agriculture reports that the average price of beef rose 25% between 2005 and 2012 to reach $5.09 per pound, and the increase doesn’t seem to be slowing down. The prices are expected to increase another 4% (or more) in 2013.

This trend is something any foodservice business should be aware of. However, just because beef prices are rising doesn’t mean it has to come off the menu.

We’ve talked in the past about how you can adapt to rising food prices, and there’s no reason to treat beef any differently. Here are some tips to keep the beef customers crave on the menu:

  1. Go beyond the traditional beef and steak items, and try different cuts.
  2. “Beef up” less expensive cuts of beef with creative marinades and seasonings such as the Mediterranean Marinated Beef with Vegetable Kabobs or the Sweet & Tangy Apricot Glaze.
  3. Be mindful of your cooking techniques and think about how you can make tougher cuts of beef more tender.
  4. Reduce portions of beef by adding pasta to fill the plate or by offering smaller options such as Sloppy Joe Sliders. This can help lower costs and fill your guests’ stomachs.

Tools of the Trade

Getting our expert R&D Chefs’ opinions on their go-to kitchen tools.

Chefs have countless tools at their disposal, and they’ve grown increasingly complicated and more full-featured with electrical tools and machines like mandolins, immersion blenders and multi-functional food processors. Despite advances in technology, knives are the tools that all chefs depend on more than any other.

Almost every chef has their own set of knives that suit their personal style and is comprised of the types they need to accomplish their specialized tasks. We asked our Culinary Specialists Jack and Joe about their go-to knives and other kitchen tools. Here’s what they had to say:

Marzetti Foodservice: What is your favorite tool and why?

Jack: Carving knife and fork set – These are my favorite tools because beyond being extremely functional, they are something that I pull out for special occasions. They represent something more than just kitchen tools to me.

Joe: My 9” Forschner serrated knife. I got this knife while at my first job after culinary school.  It has a curved, very thin and sturdy blade with relatively “soft” teeth which makes it great for slicing everything from delicate bread to produce without damaging its structure.  I’ve even used it to ice cakes, thinly slice salmon (as a thin spatula). It can do almost anything!

Marzetti Foodservice: Do you use different tools for functionality, cutting edge or tried and true?

Jack: Tried and true tools are so because of their functionality.  There are however, some newer cutting edge items such as micro-planers that have become very popular because of their exceptional functionality.

Joe: I prefer function to form.  In many cases I think that highly functional tools exhibit their own aesthetic. My knife kit, for example, is a hodge-podge of different knife brands because certain brands make better versions of certain knives than others.  It is not the prettiest set, but they are all perfect for me and what they do.

Every chef has his or her own tools of the trade. What couldn’t you do without?

Making Customer Experience Everyone’s Job.

Food is only one part of great restaurant experience. According to the 2013 Restaurant Industry Forecast, 97 percent of adult consumers surveyed said good service was the number one reason for selecting a restaurant, followed by 93 percent who cited enjoyable atmosphere and, again, 93 percent who indicated good value was important.

It’s no secret that a restaurant’s product is just as much atmosphere as it is food. Food is largely controllable with quality product and a skilled chef, but the customer experience is a team effort created by everyone from the dish washer to the wait staff to the greeter and kitchen staff.

The best restaurateurs know that controlling the customer experience is nearly impossible by themselves, so they strive to create a culture of excellent experiences by spending time to effectively manage service staff, advertising and brand impressions, and, of course, food – everything that contributes to repeat business.

  • Service staff – Proper training and support is needed, as well as friendly attitudes and professional appearances. Encourage servers to carefully listen to and follow through on customer requests, especially those related to allergies or diet needs. They should be attentive to needs of customers and frequently check on them to see how they can improve customers’ experiences. The best way to create a staff that that keeps customers happy is to make them happy first. Treating them with respect and motivating them to deliver great service will make them feel valued and focused on customer needs.
  • Advertising/brand impressions – All touchpoints matter, even those outside of your business. Your ad campaigns are usually the first impression guests will have of your business. Be sure the message is in line with what you want guests to feel when they experience your restaurant and brand. Communicate the experience they can expect, and create a culture that delivers on that promise.
  • Food – Food brings a restaurant’s promise full circle, which means offerings must keep your guests coming back for more. On trend whole grain menu items are easy with help from Marzetti and delicious whole grain products that your guests will crave. Have their allergy needs been met? Accommodate gluten free needs with healthy entrée salad offerings and Marzetti’s large selection of tasty gluten free dressing and sauces. Take time to make sure your guests requests are executed properly. Is their steak prepared like they asked? These details are seen as indicators that a restaurant cares about the preferences of their guests and has created an experience just for them.

Embracing School Snack Guidelines

Nurturing a more health-conscious culture.

The U.S. Department of Agriculture recently introduced new proposals for standards on snacking options provided by schools, including limits to junk food and requirements for vending machines and snack bars. This follows the FNS and USDA nutrition standards for school lunches instituted in 2012 requiring schools to increase the availability of fruits, vegetables, whole grains, and fat-free and low-fat milk to help reduce sodium, saturated and trans fat in meals.

The proposal aims to curb the issue of overweight or obese children, but they also reflect new cultural values when it comes to food choices.

A Lighter Culture

Consumers are increasingly demanding lighter, healthier menu items, which has led to a growth in entrée salads in quick service and fast casual restaurants. More than four of every five American adults bought salads away from home at least occasionally in 2011, and nearly half of consumers say they order salads on most restaurant visits, up from 34% two years earlier.

The growing popularity of salads has created a culture of salad innovation with more dressing varieties and the types of vegetables, fruits and nuts that act as toppings. Healthy food options are now more diverse, interesting and attractive to adults and children alike.

Nurturing Healthier Choices

Schools are in a unique position to set a precedent for healthier eating by helping to build those habits in children early to help increase the behavior we’re seeing in some of today’s adults.

Whether a school’s reasons to promote healthier choices are ethical, regulatory, financial or all of the above, schools can and should embrace a culture of healthy eating:

  • Create an education program for students by teaching them about healthy eating with taste tests and recipe contests.
  • Encourage students to use the salad bar with more fruit and vegetable topping options, and using exciting new dressing flavors such as Apple or Pomegranate Vinaigrette, Poppyseed Dressing and Wilde Raspberry Dressing as a flavor enhancement to their meal
