- 2 tsp Marzetti® Buttermilk Ranch Dressing
- 1/4 cup Olive oil
- 1 1/2 cups Frozen hash brown potatoes
- 2 tsp Red pepper, diced
- 2 tsp Green onion, diced
- 2 tsp Fresh cilantro leaves, minced
- 4 Eggs
- 1/4 cup Milk
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 cup Cheddar cheese, shredded
- 6 (8") Flour tortillas
In a large skillet, heat olive oil. Brown potatoes and red peppers.
In a bowl, beat eggs; add milk, Marzetti® Buttermilk Ranch Dressing, green onion, cilantro, salt and pepper. Pour over potatoes; cook and stir until eggs are set. Sprinkle with cheese.
Meanwhile, warm tortillas according to package directions. Spoon egg mixture down center of tortillas; fold in sides. Serve with salsa.
